OpenLDAP can output a *lot* of logs for some loglevels. Have you tried
using a reasonable loglevel, such as 256?
I can also suggest configuring the slapd log as asynchronous, which
saves quite a few writes to disk and can speed things up. For example :
local4.* -/var/log/slapd.log
