If you shut slapd down and do a slapcat of the directory, does it give
you what you expected?  Is there any garbage output?

Run:
  tcpdump -n -p -s 1500 -X port 389
and then do an ldapsearch and see if there is that same long pause
between the question and the answer.

I'd also stop the slapd daemon, and start it manually with -d -1 and see
if you can figure out what it's doing while it's taking so long to find
the results.
