Well, it can be, depending on your ACLs and the DN you bind as. Note
that even if you do get all attributes, binding as anything but rootdn
(and without -z0 -l0 flags) is never guaranteed to extract everything.

Sure, either search as a user that has access to all the attributes and
can search sufficient entries.
Or, use slapcat (you will need to stop slapd for this unless you are
using a bdb database).
