As far as I know, you only need the dn, objectClass and the other
entries you want to include. Make you sure you have exactly one space
after the mail attribute in your ldif file, eg:

dn: cn=Jerry Carter,ou=people,dc=plainjoe,dc=org
cn: Jerry Carter
sn: Carter
mail: carter@nowhere.net
objectclass: inetOrgPerson
