Have you put something like this in /etc/syslog.conf
# open ldap logging
local4.err /path/to/ldap.log
local4.debug /path/to/ldap.log
local4.notice /path/to/ldap.log
local4.alert /path/to/ldap.log
(white spaces are tabs), and restart syslogd.
