of course it's possible to replicate only a part of the available
schema/data.
but it's not a feature of the current version. you have to implement
it by yourself... 
give the slurpd a config file with a different replogfile-entry, replicate
the actions logged by slapd with some pattern matching to the file parsed by
slurpd and don't forget the file  locking ...
works pretty good at my site ...
