You will need the PBKDF2 module in contrib/slapd-modules/passwd/pbkdf2, but it doesn't work with GnuTLS yet.
If you have a Linux-only environment, can achieve a similar (but not really the same) effect by using {CRYPT} and using something like "$6$rounds=10000$%.16s" as your olcPasswordCryptSaltFormat. Beware that higher values of rounds can create significant CPU impact if you have a lot of password changes.
